Papad Vadi ki Sabji is a quick dinner entree recipe made with papads and moong vadi. This protien rich recipe comes in handy on a cold winter evening.
Heat 1 tsp oil in a pan and add 1/2 tsp each of mustard seeds and cumin seeds to it. When it starts crackling add 1/2 cup of coarsely crushed moong vadi and finely chopped green chillies (optional) and saute on low flame for 1 minute. Now add red chilli powder, turmeric powder, coriander-cumin powder and salt to taste. Quickly add 3/4 cup of water and then raise flame to medium. Once water starts boiling, add pieces of papad and let it cook for a minute or two. Garnish with some finely chopped fresh cilantro. Remove from the flame and serve hot with roti.
